My name is Francesca. I’m thirty, Italian, a mother — and I carry my kitchen with me wherever I live. I make pasta the way my mother taught me: listening to the dough, trusting my hands more than any recipe.
Knead began with a simple question: why has handmade pasta become so rare? It doesn’t take perfection. All you need is a table, flour, water, hands. Time lived, not measured.
